Every branch has its own stock with a full movement history. Log waste with a reason, and move stock between branches or warehouse locations with a transfer.
If you want, turn on stock control: the till then refuses orders above what is in stock and shows how much is left. On Enterprise, purchase orders to suppliers update stock and cost when they are received.
